Breakfast at the Beach

Here's what you'll need:

chef’s tools:

  • DeBuyer Mineral B Carbon Steel Country Fry Pan with 2- handles

  • DeBuyer Asian Kitchen Knife 

ingredients:

  • 12 eggs 

  • 2 Smoked breakfast sausages

  • 2 large blanched potatoes 

  • 2 yellow bell peppers 

  • 1 red bell pepper 

  • ½ cup fresh cilantro 

  • 3 Green onion 

  • ½ Jumbo onion, cubed

  • ¼ cup Olive oil 

  • 2 cups peeedl fresh tomato 

  • To taste Kosher salt 

  • To taste Black pepper


Instructions:

- place your sauté pan on open fire 

- add the kosher salt 

- rub the kosher salt for two minutes around the sauté pan 

- clean your sauté pan with a dry kitchen towel 

- return the sauté pan to the open fire 

- add olive oil 

- add your breakfast sausage 

- cook the sausage for 1 minute 

- add the blanched potatoes 

- give your potatoes good coloration 

- add sliced red and yellow bell peppers 

- add your cubed jumbo onion 

- add kosher salt to your colored vegetables 

- add peeled tomatoes 

- add your eggs 

- cook your eggs for 6 minutes 

- garnish your eggs with green onion & fresh cilantro

this recipe can be done on open fire or at home as well.

The open fire will give a smoky flavor to the dish that I love for breakfast.

You can also use ground beef or Spanish chorizo instead of the breakfast sausage.

Eat with crispy French baguettes to achieve perfection.
