Chef David Denis is a French-born chef and restaurateur whose career has been defined by a deep respect for tradition, a commitment to craftsmanship, and a belief that great restaurants are built on hospitality as much as cuisine.
Over the years, Chef David has played a leading role in some of Houston’s most respected dining destinations, including Le Mistral, Rouge Wine Bar, and Artisans. Each chapter has contributed to his reputation for classic French technique, refined flavors, and thoughtful leadership in the kitchen and dining room.
Today, Chef David is the chef and owner of Bistro Mistral, where he brings his experience and French heritage together in an elevated yet approachable bistro setting. With locations in Memorial and Bellaire, Bistro Mistral reflects his philosophy of timeless cuisine, warm service, and restaurants designed to bring people together.
As a restaurateur, Chef David is deeply involved in every aspect of the guest experience — from menu development and kitchen standards to ambiance and hospitality — ensuring that each restaurant reflects both tradition and care in every detail.

For 19 years, this elegant French eatery featured classic fare & artfully presented desserts in a luxurious setting. I served as Executive Chef alongside my brother Sylvain, who served as general manager and sommelier. Earning recognition from Zagat as the best restaurant in Houston in 2010, 2011, and 2012, Le Mistral was a well-loved Houston classic of which we are tremendously proud.

I served as co-owner and business development consultant for this upscale Midtown establishment overseen on a day-to-day basis by executive chef Jacques Fox. Artisans serves high-end French cuisine in a warm space with rustic-chic decor.

Rouge Wine Bar
Specializing in both new and old world wine, Rouge Wine Bar was the Energy Corridor's exclusive Wine Retail Specialist and Tasting Room. With over 100 wine selections and exotic, gourmet cheese carts, Rouge was just what the neighborhood needed. Posh-but-handsome interiors promoted an elegantly relaxed and social vibe while the connoisseurs rented wine lockers to purchase specially sourced bottles.
